Classic Cheesecake Recipe

Ingredients:

  • For the crust:

    • 1 ½ cups graham cracker crumbs
    • ¼ cup granulated sugar
    • ½ cup unsalted butter, melted
  • For the filling:

    • 4 (8 oz) packages cream cheese, softened
    • 1 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 4 large eggs
    • 1 cup sour cream
    • 1 tablespoon all-purpose flour (optional, for added stability)

Instructions:

  1. Prepare the crust:

    • Preheat your oven to 325°F (160°C).
    • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
    • Press the mixture into the bottom of a 9-inch springform pan. Bake for about 10 minutes, then remove and let cool.
  2. Make the filling:

    • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
    • Gradually add in the sugar and vanilla extract, mixing until well combined.
    • Add the eggs, one at a time, mixing on low speed just until incorporated after each addition. Be careful not to overmix.
    • Gently fold in the sour cream and flour (if using) until smooth.
  3. Assemble and bake:

    • Pour the cream cheese mixture over the cooled crust, spreading it evenly.
    • Bake in the preheated oven for about 55-65 minutes, or until the center is set but slightly jiggly.
  4. Cool and chill:

    • Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour. This helps prevent cracking.
    • Remove from the oven and let cool to room temperature. Once cooled, refrigerate for at least 4 hours, preferably overnight.
  5. Serve:

    • Once chilled, remove the cheesecake from the springform pan. You can top it with fruit, chocolate, or a drizzle of caramel if desired.

Enjoy your delicious classic cheesecake!
